Chocolate Oaty Slice
200g butter 150g caster sugar 60g golden syrup 200g porridge oat flakes 200g self-raising flour 50g unsweetened cocoa powder
Preheat an oven to 180 degrees Celsius, or equivalent. Line a 28x18cm baking tin with parchment paper. In a medium saucepan, over a medium heat, melt the butter, sugar and golden syrup together until the sugar is fully dissolved. In a mixing bowl combine the oats, flour, and cocoa powder. Pour the melted ingredients into the dry mixture and stir until evenly distributed and the mixture appears moist. Transfer the mixture into the lined baking tray. Bake on the middle shelf of the preheated oven for 15-20 minutes or until the surface appears slightly dry. Cool in the tin completely before cutting.
Melt some chocolate for the top if you want too.

I reduce the sugar in both of these (and most of my baking) by about 1/3rd which my colleagues still seem to find sweet enough.

You're welcome. It's an old recipe but a good one. Makes a change from flapjack. They can also be half dipped in chocolate if you want to posh them up a bit!

This is my current favourite oat recipe.
Oat Bread 170 grams oat flour 2 tsp baking powder ½ tsp salt 2 large eggs 140 grams plain whole-milk yogurt, or plain soy yogurt 20 ml (1 ½ tbsp) olive oil 1 tsp apple cider vinegar, optional for a fluffier bread
Heat oven to 180°C (350°F) and line a 1lb loaf pan with parchment paper or grease with oil. Mix oat flour, baking powder and salt. In a separate bowl, mix all wet ingredients together: egg, whole-milk yogurt, olive oil and optionally apple cider vinegar (for a softer homemade oat bread). Using a spatula, make a hole in the centre of the flour and add the wet mixture into the middle. Mix until dry and wet ingredients are well combined into a lump-free batter. Evenly spread the batter into your prepared loaf pan. Bake in hot oven for 30 to 40 minutes, or until a toothpick inserted into the centre of your oatmeal bread comes out clean. Let cool for at least 15 minutes before slicing.
Not the sort of bread you can use for sandwiches but lovely with soup, cheese or sweet toppings. I add about 1/4tsp of xanthan gum as it can be a little fallaparty.
