I use the kmixer to make mine, put banana halves and oil in the mixer to mash together and then chuck the rest of the ingredients in and mix, so quick and easy. I apologise that it’s not as neatly written as Alpenrose



This bran loaf is nice too.

I have a similar loaf recipe that works with non dairy milk:

1 cup porridge oats / oatbran
1 cup soft brown sugar
1 cup of mixed fruit (Aida likes sultana and cranberry)
1 cup milk
Mix together and leave to soak overnight / all day.
Add cup of self raising flour & and put into either greased, lined 2lb tin.

Bake at 180C until firm to touch.

That's a tea cup rather than an American measure.

Still making a weekly loaf. Had a bit of a baking day yesterday. Spelt loaf, OK a bit over baked, spiced ginger tray Bake, tasty but I iced it too early so it looks a bit ropey and then a pizza. I have been tryingbpizzas for ages and trying to get them thinner...



Very happy with it.
