I grew up on apple cake, courtesy of a mum born in Dorset. Apple everything, come to that, we had four Bramley trees. This flourless chocolate cake jamieoliver.com was nice with fresh raspberries and single cream. Or soured cream / creme fraice / greek yogurt would work too. |

All the talk of apple cake got me thinking about what I should do with some windfall apples that were being given away in the village. Day off today so I baked an apple cinnamon swirl cake using a yoghurt loaf cake recipe and subbing chopped apples for the berries, put half the mixture into the tin and topped it with a cinnamon and dark brown sugar mixture, rest of the cake mix on top and more cinnamon sugar mix. Just tested it and I think it's a winner. Hopefully my OH will like it too but if not I'm sure it will freeze and I think it would be nice with some custard as a pudding too. Can't decide whether to bother with a xmas cake or not this year. Need to decide soon as I usually bake it during the taper so need to buy ingredients and do it next week. I can't work it out from the online info - can anyone say with any confidence if the mixture I usually bake in an 8" square tin would be ok in 2 x 2lb loaf tins and if so would I need to adjust the cooking temperature? Obviously cooking time should be shorter. |
