I'm glad it was a success Tom Tom.

I haven't had coconut pancakes for years Elsie - that takes me back to a lovely little Thai restaurant in Kingston Upon Thames that I used to frequent. Dessert was always coconut pancakes with a filling I can't remember and ice cream.

I've had wildly varying results with coconut flour. I bought some from H&B which was rubbish - hmm, you get what you pay for. Reasonably priced The Groovy Company (from Sains, often on offer) was much better - but it does demand special treatment.

I like using different flours - bread flour in cakes for instance, buckwheat in just about anything - coconut is only one I've found that is REALLY different in behaviour.

Sallykate, so you use 20g dried yeast in the hot cross bun recipe? And have you tried the overnight fridge prove? I’m keen to try but haven’t made hot cross buns or proved anything in the fridge before ...

I get v good results when i prove in the fridge - i tend to do overnight / whilst i’m at work depending if baking will be in the morning or evening...

I doubt I can get fresh yeast so I'll use a sachet (7g) of dried.

I prove my sourdough overnight in the fridge. You're basically just slowing down a chemical reaction by lowering the temperature. A temperature drop 10 C halves the reaction rate (approximately), so the proving takes four times as long in the fridge (ish) but it still happens.

I'll make the dough tonight and stick it in the fridge, then divide and bake tomorrow. I'll mix / knead it in the Kenwood. Won't add fruit because daughter doesn't like lumps in her food (!), but like LizzieW I find it annoying adding bits to dough, tricky to get them evenly distributed.
