I used sherry with a splash of rum in my recent fruit cake. Does booze really make any difference to the final taste after baking though ?

If you keep pouring alcohol on a fruit cake for a few weeks after baking I believe it does, DT. It knocks our heads off when we open the Christmas cake when it's been sat soaking for a few weeks :)

Pouring booze over / into a finished cake will I’m sure change the smell and taste. I was thinking only of what is used in the initial soak prior to cooking

I use the recipes that were in the Kenwood booklet- and yes first contact with the bowl does turn the mixture solid sometimes

The very best ce cream I ever made was one Christmas using up a tub of bought “fresh” custard, some brandy cream and excess ganache - never been able to quite replicate it :(

I don’t think it makes a lot of difference DT, Teatotal grandma made her Christmas cake soaking fruit in tea and ate mine without questioning ingredients.

I don't think it makes any difference DT - sub orange juice for the alcohol it you're not going to feed it anyway.

I made a cherry brandy and chocolate xmas cake a couple of years ago GM. We didn't like it as much as my usual recipe though (which I'd fortunately made too) so I haven't repeated it but could be worth a try?

Vote for Brandy soaked Xmas cake from me. Tea is for everyday. Have just taken this low fat tea loaf (1 egg) out oven after soaking fruit overnight. Will try to restrict it to 1 (maybe 2) slice a day.
