Anyone have a good non chocolate-cake recipe with oil rather than butter. Not carrot cake either. Someone [glares at husband] had a shopping fail. |

Hmm, can't remember the recipe I used (possibly early Nigella - I will go and check if I have the book here) but Italian apple cakes often use olive oil rather than butter.

I don't have one I have used lf but there are a few online for citrus olive oil cakes (why not chocolate?) or you could just do this: How do I substitute olive oil for butter in cakes and other baked good? As a general rule of thumb, substitute three-quarters of the butter in a recipe with olive oil. In other words: If a baking recipe calls for a stick of butter (8 tablespoons), for example, use 6 tablespoons of olive oil. Or search for vegan recipes? |

I have some forgotten butter in the freezer from last time i made rough puff. The internet tells me i can grate and use that for baking so if all else fails I'll try that. My go to in this situation is a fat free tea bread but I don't have enough dried fruit. |

Jack Monroe traybake or banana bread are OK with oil. I'd agree with reducing quantity. Maybe dairy-free cake recipes?

Apple and walnut cake - I omitted the sultanas and - rum! - and it was lovely, but isn't on line. There's a version here if you scroll down, but don't think it's really what you are after. I agree about using less oil than you would butter. No reason against mixing either - I occasionally do with coconut oil and butter. rhubarbfool.co.uk |

Runny eyes - you can force the mix towards fudge instead of toffee if you let it cool a bit then beat it, adding a small amount of caster sugar. Repeat a few times. The nucleus of the sugar crystals prompts more crystals to form, while undisturbed mix tends towards toffee.
