Are you rising it cold overnight Fleecy, and how long does it prove after shaping, before baking? In a tin, or a banetton, or free form?

Google searches for yeast seem to suggest a lot of profiteering going on. People on ebay seem to be splitting a 500g pack of fermipan (retail £6 ish) and selling it 25g packs for £3.50 each!

Fleecy: I shape it at the end of kneading (either in a breadmaker or by hand). Then I leave it to rise (which is either overnight, or over day depending on the time of year!). Once risen I bake without touching it.

I doubt this is the "proper" way to do it, but it is the lazy way to do it, and it works!

(though perhaps I should qualify that, with the fact that my main goal when baking or cooking is to produce edible food. If it is nutritious, cheap and uses ingredients that need using up, bonus.)

Focaccia and a roman style loaf (apparently)

Half a small bag of yeast left now, probably another 5 or possibly 6 loaves left. Was it worth making, heck yes.

I’m used to baking with yeast so I’m not used to how floppy the dough is. I don’t have a wanky basket but have got a tin which worked ok another attempt. I’m probably going have to leave it longer aren’t I? It needs too much patience even with a machine this stupid sourdough!
