Banana, pecan and maple sounds lovely Mandy.
I do think ginger cake tastes better for having had a few days to mature DT. I left my Parkin the best part of a week.
Hadn't heard of St Fillan's pudding Fizz - looks similar to an Eve's pudding?

I've been creating my own sourdough starter for the last couple of weeks and have recently started saving the daily discard. Today I used some of it to make cinnamon muffins. I had to bake them in the air fryer as we have no oven and they look like they have been invaded by aliens, but they are light and fluffy inside, with a crispy top and are very tasty. My first exploration into baking with sourdough has been a success.
My starter is in the jar at the back of the picture. I'm gearing up to make my first sourdough loaf any day now...
