Anita Bean's blackberry frangipane traybake:
100g butter 60ml light olive oil 100g sugar 2 eggs 1 tsp almond extract 100g ground almonds 125g self raising flour 1 tsp baking powder 4 tbsp milk 150g blackberries 1 tbsp flaked almonds
Preheat oven to 180/fan 160/gas 4.
Line an 8" square tin.
Beat together butter, oil and sugar until well combined and light in colour. Add eggs, almond extract, ground almonds, flour and baking powder. Mix until well combined adding enough milk so you have a soft consistency. Fold in blackberries and spoon into tin. Scatter over almonds.
Bake for about 20 minutes or until golden and a skewer comes out clean.
