Sourdough's not really faffy. Rye flour starter is easy - as Sally Kate says. You just need a bit of PATIENCE as the starter has to get fermenting and start bubbling.
I was dead pissed off that the rye flour I'd ordered was omitted from my order to H&B after being informed by email it was 'now in stock'. It was just chance we'd run out as I often put some rye flour in my parkin.
I like using different flours as they really do produce different results.
Beware of coconut flour though - some versions are RUBBISH and don't work as they should. I'm looking at you Holland Barratt. Groovy Company from Sains much better.
I mainly buy Doves flour for everything.

I can only tolerate a little bit of rye flour unfortunately so I'm not sure if a rye starter would be ok for me.
