jacdaw - I do the same with frosting - means the cake stays fresher for longer.
Alice - how did your brownies turn out? I was thinking about gf baking earlier, muffins are quite forgiving with gf flour.

I had a bread nightmare yesterday, it over proved and then over proved in the tune, it was all over the side as it had spilled over the side, but the end result wasn't too bad.
