Curiously that is what I am looking for right now. Struggling with the gear levers on my 20 year old Kona and I think I need a treat. But I'm baffled by the choices, if I'm honest. Is everything a single chainwheel now? Whilst I might want to go a bit offroad, I also want to be able to blast down the hill towards home at 37mph.

Almost all are single chainring now, and you can’t even fit a double if you wanted to. The exception to this might be the budget end of the market, but you’re likely to end up with crap components then.
1x12 does give you a reasonable spread of gears, but there’s always going to be a compromise - and it’s usually at the ‘harder’ end of the range, so you might only be able to whizz along at 27mph.
I’d personally recommend a 29er for what very little I know of your riding, but I know not everyone on here would agree

My impression of 29ers was that they mainly do larger frame sizes - not for short arses? I am looking at about £1000 max, not Cath-range.

I ride 29er's and i'm only 5'7" and the person who started the US brand Niner who only make 29er's is only 5'5"

I’m not sure how much of a short arse you are quimby. I’m only 4’10” so a 29” was not an option. I have a Vitus Sentier 27.5 and love it. It was £1200. It’s 1x11 which is mostly enough of a range for me.

5' 4", halfpint. I don't know Vitus as a brand. But that goes for a hell of a lot of brands with MTBs. I've only ever had two - first one was a purple one (a Cannondale, the cost of £550 is etched in my brain because I was 17 when I bought it and that was a hell of a lot of money then). Second one was red (Kona). I'm thinking maybe a nice teal colour this time?
I suppose one of my big unanswered questions is: which size of tyre is easiest to get off if I puncture? Or for £1000 will I get something which has tubeless tyres as standard?

If you’re buying a hardtail again you can still get quite a lot of bike for £1000, quimby. I’m 5’4” and all my bikes are 29ers.

You’ll likely get something that’s tubeless ready - then get the bike shop to convert them for you and add some sealant. Tyre size doesn’t impact ease of removal - different makes / compounds / star alignment all influence how much of a twat they are to remove / change. Since being tubeless I’ve had 4 punctures - two of those involved rim damage; the other two involved slit tyres. And I guess I’ve run tubeless for probably 10 years.
