This evening I had some beetroot and celeriac soup with some carrot, potato, garlic and Marigold vegetable bouillon. Came out nice, albeit very red. I love the 'peel it, chop it, chuck it in' approach as it means we are throwing away a lot less food. The only thing I've found really doesn't work is 'stringy' green veg like kale. YMMV of course.

Carrot and ginger - prep 5 mins, on hob for 35 mins then blitzed with stick. Cheap lunch for a few days.

I’m going to buck the trend of this thread - no blender! Chicken stock from scratch to make a ramen-style noodle soup with wontons. Also good for chucking in random veg ends.
