I grated a white potato, sweet potato, 1/2 courgette (grate and squeeze excess liquid) 1/2 onion, chopped coriander. I added a good tsp of curry powder, 1/2 tsp chilli, turmeric, garam masala, ground cumin, coriander.
Mix well to combine ingredients.
Heat a frying pan and cook medium low heat. Turning is a trick I’ve not mastered but try to slide out into a plate and flip back in to cook otherside.
The recipe i base it on was purely potato and onion but I like the mixed veg option and add spice to your own taste. It’s yummy though.

It is all raw veg.
We eat more veg than anything I’ve just been helping my auntie make a curry from (almost) scratch (I gave her my home made base sauce) she had a load of chicken an onion and a few mushrooms. Ours is small amount of chicken a good sized onion masses of mushrooms, courgette, pepper, spinach, green beans, squash whatever I can find that week or needs using really.

I really like the sound of that gg - and I have courgettes and sweet potato to use up.
One of my student staples used to be grated potato and onion mixed with egg and cooked gently in a frying pan. I haven't made it for years now.

I do a courgette mint and feta fritter too. That is grated and squeezed courgette, crumbled feta and chopped mint lightly bound with a beaten egg and fried. (I’ll check if you put flour in or not) that was supposed to be lunch today but I thought rosti would be easier 😂

That's a favourite of mine gg - no flour, and I add red chilli. Another one I haven't made for ages, and another contender for using the courgettes.

Ohh chilli is a good call. I normally make them in the pizza oxen while it’s heating up. We’re having pizza in Saturday so I might make a batch I’m sure I could just warm them through for lunch.
