Little Miss Happy
This is the base recipe from Anita Bean's The Vegetarian Athlete's Cookbook:

100g digestive biscuits
40g butter
500g quark (or ricotta)
2 eggs
150g low fat plain Greek yoghurt
100g sugar
1 tsp vanilla extract

Blitz biscuits, add melted butter press into the base of a lined 7” springform tin.
Blend all other ingredients well.

Pour batter on top of base, bake at 160C/140C fan/gas mark 2 for 40-45 minutes until just set with a slight wobble and a golden hint round the edges. Turn off oven, prop door slightly ajar and leave cheesecake to cool in the oven.
Once cool remove from oven and keep in fridge until ready to serve.

I often increase base ingredients by about 25% and use an 8" tin.

Variations including folding in 200g blueberries or raspberries before adding batter to the tin; adding 100g melted chocolate to the batter; using salted caramel flavouring instead of the vanilla with brown sugar and fudge pieces, topping with fruit once baked etc etc.

I've also used low fat plain yoghurt and soya yoghurt. It's very adaptable.

My favourite mix for unbaked cheesecake is a tub of mascarpone whisked up with a 500g tub of fromage frais, drained overnight in a sieve. Fromage frais seems increasingly difficult to find in supermarkets now, annoyingly. The mascarpone gives it richness while the fromage frais keeps it fresh and not too heavy.

“Naan bread”

We’ve decided it’s not naan as in curry house but much better than shop bought so i thought I would share the extensive recipe

100g yoghurt
125g SR flour

Mix
Knead
Dry fry for a couple of minutes each side

Enjoy

I cut into 4 pieces but I think you could use as a flatbread if left larger

I will be using this instead of shop bought now on as it’s no effort to make

It's a great recipe and one which I've used for years, having seen it in a Madhur Jaffrey book - and if it's good enough for her then surely it's good enough for anyone!

Daughter made a lovely GF banana bread yesterday as she didn't have school and loves baking.

I don't know the exact recipe but this one from Nigella is pretty close, in terms of quantity of flour and the fact it includes yogurt:

(No chocolate or walnuts in daughter's but no doubt they're lovely additions!)
