And such a long time till next Christmas! I'm wondering about having a mid-winter Christmas Cake this year - I realise this is a southern hemisphere thing. Or maybe making a Simmel cake for Easter / Mothering Sunday (though in NZ we have Mothers Day in May instead of your Mothering Sunday in March).

I divided my Xmas cake mix this year and baked it in 1 x 2lb and 2 x 1lb loaf tins. We had the big one at Xmas (just a couple of slices to go) and the other two are in reserve. Was great to have such a quicker baking time too.

Mom three Christmas cakes sounds great. I used to bake two loaf tins but one year (in our old house) the second went a bit mouldy. This year I just made a 20cm round tin. I definitely prefer a loaf tin for ease of cutting slices, or the big square tin my Mum used to bake.

That's a good thought, loaf tin. Mine are a huge round thing but a couple of loaf sized ones. Well worth considering. I will stick a reminder on the calendar (Christmas planning underway then ;-) ).

Have had to call the plumber out for a small job tomorrow and for payment asked for a lemon drizzle cake so have been baking 😂

We ended up with two loaf tin ones - we've eaten the first and are working our way through the second at the moment.
