I usually make a square one but the mix divided nicely into the three tins, only marzipaned and iced the largest which works well as OH isn't that keen but likes the cake. Until the two smaller ones have remained wrapped in greaseproof and tin foil and I've fed the one we haven't started yet which I hope will help to preserve it. If I get worried I'll just slice and freeze it.

Mmmmm, I like a lemon drizzle Mandy.

My Christmas pudding mix didn't all fit in one basin so half is in the fridge. I'd better cook it! (Only made just before Christmas)

OH has chosen lemon drizzle cake for his birthday tomorrow. We have a bag of lemons from our neighbours tree, but it is years since I've baked a cake that wasn't Christmas cake, or banana cake.

Any recipe recommendations? Ideally dairy free, but I can easily adapt.

This is good and wors with dairy free baking spread and non dairy mile Jenelopy:
Lemon Drizzle Cake (Guardian)
175g butter, softened
175g caster sugar
2 unwaxed lemons
3 eggs
100g self-raising flour
75g ground almonds
A little milk
100g demerara sugar
Pre-heat the oven to 180C/160C fan. Grease and line a 2lb loaf tin with greaseproof paper. Beat together the butter, caster sugar and the finely grated zest of 1 lemon until light and fluffy. Add a pinch of salt and the eggs, one at a time, beating until well combined before adding the next.
Sift over the flour and fold in, followed by the almonds. Add just enough milk to bring the mixture to a dropping consistency (so that it falls off the spoon), then spoon into the prepared tin and even out the top. Bake for about 50-55 minutes, until a skewer comes out dry (crumbs clinging to it are fine).
Briefly mix together the remaining lemon zest, and the juice of both the lemons with the demerara sugar, then poke holes all over the top of the warm cake and pour over the drizzle, waiting for the cake to absorb one lot before adding the next.
Allow to cool in the tin before turning out.

What I'd really recommend though is my lemon polenta cake. Lovely served with some (non dairy) Greek style yoghurt:

Gluten Free Lemon and Polenta Cake

Ingredients
200g unsalted butter
200g golden caster sugar
200g ground almonds
100g fine or coarse polenta
1 ½ teaspoons baking powder

3 large eggs
zest of 2 lemons

For the syrup
Juice of 2 lemons
150 g caster sugar

Method
Heat oven to 180C
1. Cream the butter and sugar until pale and fluffy
2. Mix the polenta, ground almonds and baking powder in a bowl
3. Add the dry mix and eggs, alternating as you go and ending with the dry mix
4. Add the lemon zest
5. Pour into a prepared cake tin and bake for 35 – 40 minutes, or until a skewer comes out clean
6. While the cake is baking, make the syrup. Heat the icing sugar and lemon juice in a pan on the stove and heat until the sugar is dissolved
7. Take the cake out of the oven and prick all over, leaving holes big enough for the juice to soak through. Pour the syrup over the cake straight away and leave to cool completely before serving

I use half and half polenta (corn meal) and ground almonds and have made it dairy free too.

Thanks LindsD and LMH, I'd forgotten about the article with lots of recipes linked! I think I'll go with the Guardian one this time (I see it is Felicity Cloak, whose recipes I generally find reliable!).

I'll remember the polenta cake recipe for another time (it looks a good gluten free option), but we don't have any polenta in the pantry and I don't want to make an extra supermarket trip if I can help it.

Yes, she did a supper club at the Brighton community kitchen, the theme was breakfast with her Red Sauce, Brown Sauce book. Marvellous food, and she is as delightful and normal as you'd expect :-)
