I alsways use lard rather than oil and have silicone muffin ‘tins’, so they don’t stick -
Not sure the lard is essential, but they started working again when I switched back after several failures.

I also use silicone muffin tins and a few drops of rapeseed oil. We sometimes do one big one in an enamel tin, doesn't seem to stick too much.

I switched to using lard for Yorkies, a lot less greasy but you probably need more fat in the pan Elsie. The fat should be really hot when you put the batter in - at least 10 minutes in the oven. (I'm not actually an expert at making them but they never stick and I use a variety of receptacles.)

I did 5 minutes in the oven before batter so I’ll try longer. So next time -lard, more of it, 10 minutes in oven before batter and allow to rest.
