I suggested putting half of it in the freezer, but Mr GM insisted that we'll manage to eat it all before it goes off 😆

The frosting was a bit of a salvaged calamity, DT.
The recipe called for some lemon juice (I used orange); 50g soft brown sugar; 150g cream cheese all mixed together then pop in the fridge. It was tasty, but a runny mess. There was no way that would sit on, or in the middle of, a cake.
So I added looked at various other recipes online. “Icing sugar,“ they cried. So I added maybe 75g ( not measured).
That only helped very slightly, so I went back to these other recipes and they all had BUTTER in them.
I whipped about 50g of butter in a bowl and added the slop about a third at a time. And that worked. It isn’t too sweet, despite all the sugar, thankfully. It is still a little bit on the soft side but holds its shape.
Next time I’ll leave out the brown sugar and see what happens.

I found a recipe on the BBC which stays in place but isn’t too thick and that has butter in :

Beat 50 g butter in a large bowl with a hand mixer until really soft. Add 200 g cream cheese (I’ve used normal and full-fat Philadelphia and both work), and beat again until well mixed. Sift over 100 g icing sugar, add the zest of an orange, then beat until smooth

Millionnaires shortbread seems to be taking an age to set, even in the fridge (probably doesn't help that fridge is pretty full after food shop last night).
