I'm just catching up with today's bakes. That is probably the best Victoria Sponge I have seen in a long time, DT. The breads look good too. I'm like EP; I've never tried a sourdough starter and wasn't sure why it's so popular. Now I do

Why is sourdough popular...
Because it is hip and trendy. Because it tastes nice. Because it is more 'natural' than commercial yeast. Because it is more environmentally friendly than commercial yeast. Because some people find slow fermented dough more digestible, and perhaps more nutritious.
But mostly... because there's no bloody yeast in the shops.
