Oh dear, sorry to hear that Linds. I don't know if you can just sub caster for icing - there are other recipes online that use caster sugar but I've only ever made them with icing sugar.
Good Housekeeping have one egg white (15g) to 150g icing sugar.

Linds - if you haven’t already faffed with the flax egg I’d just use 1 less egg than recipe wants (you can always add a bit of milk/alternative if it needs a bit more liquid). I do this all the time..

I used the flax but it didn't work. It has sunk in the middle. I did wonder about just using the two eggs I had as they were large. Not sure what went wrong. I also had no SR flour but used extra bp which I've done before, and had to top up my caster sugar with granulated but can't see that having an effect. Sure it will taste OK but am a bit pissed off with my day so far.

Taste is the important thing Linds. Take a deep breath and re-frame it as an experiment in make do cooking that has enabled you to produce a cake when many wouldn't have bothered trying.

Sounds good. It’s the stuff that you genuinely can’t eat that isn’t great. If it looks a bit ropey I just say it’s rustic-style, or the Aga’s fault
