Thanks LMH, I’ll have a look at those. To be fair I’ve not yet experimented much being only a beginner at gf. I’ve not got a kitchen at the moment (kitchen extension underway) but am looking forward to getting back to baking when I have my new kitchen.

I mainly eat brown/wholemeal/multigrain. Muesli bread sounds lovely :-)

Haha Lizzie. Possible, but not much space at the moment and minimising washing up. Easiest to buy at the moment. Only a few more weeks...

I would really struggle without a kitchen - I hope yours is soon back to normal.

It's hard to make a wholemeal gf bread - you can use brown rice flour and buckwheat but I haven't found a good substitute for multigrain/wholemeal and I've been doing this for about fifteen years now.

Muesli bread recipe from Carolyn Humphries:

2 eggs
50g butter, melted
175ml milk
150ml plain yoghurt
2 tbsp clear honey
30g tapioca flour
30g cornflour
60g potato flour (I buy this from the World Foods section in the supermarket)
155g rice flour
1 tbsp xanthan gum
1 1/2 tsp salt (I use 1 tsp)
1 tsp bicarbonate of soda
75g gf muesli (or I make a mix of oats, dried fruit and seeds)
1 tbsp active dried yeast

Beat together eggs, melted butter, milk and yoghurt, pour into bread maker pan and add honey.
Sift flours (you could try with just a generic gf plain flour) with xanthan gum, salt and bicarb, tip into pan, add muesli. Sprinkle yeast on top.
Set machine to basic, 700g, medium, dark crust .

My favourite from that GF bread book is the Linseed loaf. It's scrummy. I've made loads from there that have been great though. It's my only bread book that I use...

I've not tried that one Wine Legs but you've inspired me to give it a go. Do you use quinoa flour or just the buckwheat? I don't think I've seen the quinoa other than at my specialist health food shop and I don't get there very often.

I have quinoa but no way of grinding it sufficiently to make it into a flour.
