Weasie - I've never made shortbread but Cedd is pestering me to make it with him. Is it difficult? Do you have any good recipes that don't involve lemon (he hates lemon)? Could it be done with a 4year old? And a 2 year old as well? We are used to baking together

Shortbread is incredibly easy to make, LF, loads of recipes online. I like to make it with rice flour. Will post recipe later.

LF - shortbread is very easy. Basic Recipe ~ 4oz Butter, 2 oz caster sugar, 4oz Plain Flour, 2oz Ground Rice. Cream butter till soft, add caster sugar and beat until pale and fluffy. Stir in flour and ground rice, knead well to form a dough. Roll out to about 1cm thick, cut with a round cutter, re-roll as needed. Place rounds on a baking sheet, prick with a fork, and dredge with sugar. Bake for approx. 12 minutes at 180c, gas mark 4. |
