Two favourites are seared salmon with black bean salsa (an old Delia recipe) or chicken thighs roasted with honey, lemon and soy sauce and served with herby couscous (though OH doesn't like couscous so for him I do homemade wedges instead.)

If the risotto was with Feta and sage, it might be preferable cooked with red wine rather than white.

That chicken recipe sounds good, Daisy. Salad with it?

I ended up with three weeks' worth of beetroot from the vegbox, plus some some very chunky carrots, so roasted it all with some thyme and have eaten it with leaves, grilled halloumi and pine nuts.

OH actually enjoyed it with left over roast chicken too. Sainsbury's harissa dressing is a perfect match.

One of my faves and only takes 10 mins or so to prepare and cook. Fry up some chopped courgettes with bit of garlic and chilli, add king prawns and chorizo, then stir in tinned chopped tomatoes, serve with tagliatelli or pasta of choice. Delicious (even more so if you use butter for frying!!).

My Nana used to have a million recipes for beetroot (being Polish). I didn't used to like beetroot so didn't really pay much attention. The only things I use them for now is Barsz (beetroot soup) and ćwikła (pronounce CHVEEK-wah), which is a relish made from horseradish sauce mixed with grated beetroot.

Welcome to the 700 miles in 2018 thread, everybody welcome :-)

The thread motto is:

'700 miles is neither necessary nor sufficient'

All you have to do is run about 1.91 miles per day or 13.46 miles per week or 58.33 miles per month and take a picture when you get to 700 miles of either you or the spot you reached the target or both if you want to. And if you go under or over 700 miles nobody will mind.
