Sounds good. I made roasted butternut squash, red pepper and coconut the other day. It wasn't as good as previously, but I had to substitute most of the fresh ginger for ginger powder (on account of the root having rotted at one end) and I had to use cayenne pepper as the chillis had gone mouldy. I've bought more ingredients and will try again this week.

I think my fave homemade soup is Leek and potato.
Might make some tomorrow if work is quiet enough for me to pop in and out of kitchen...

today I had mushroom soup loads of mushrooms 2 onions and stock it was very dark grey and looked revolting but tasted ok!

Mushroom soup ~ shudder ~ I love mushrooms, grilled, fried, sauteed in butter, with or without garlic, raw in salad, etc etc But I'm not a big fan of mushroom soup. Something about the texture I think. I can do Cream of Mushroom cup-a-soup though.

Bendy veg soup here. All the veg left at the bottom of the fridge: carrots, parsnips, leek, onion, sweet potato, celery, spinach + veg stock, gralic and cumin. Very tasty.
