Dead easy - just sweat some finely chopped onion (or white bits of leek in your case) in olive oil with some salt and lid on until soft. Add a whole head of chopped celery (with the feathery leaves too) and sweat until that's soft. Add your stock and a big handful of raw cashews. Cook until cashews have softened, then blend until completely smooth.
If you've got access to fresh lovage; it's good to add a bit of that in too.

That C&C sounds properly interesting RS. It’s on the list
I never blend any soup that has potato in it. I’m not a fussy eater, but I hate the “wallpaper paste” consistency of blended tatties. Intrigued to try Kallø kubes.

And I always use salted butter but never add raw salt. Just the stock cubes.
