Interesting to read this thread, thanks! I stopped eating meat decades ago (when I was 11), and dairy 2 years ago. I occasionally eat sustainable fish (~once a month), though probably wouldn't in Europe as I think the waters there have been more over fished than here in NZ. I only eat eggs from our own chickens (when they feel like laying!), but still eat honey. I suppose I could be described as a fussy eater, but I like to think of it as eating with my own set of ethical/environmental guidelines!

When I cut out dairy, I mostly didn't replace it with fake-foods. I now have coffee black most of the time. I replaced cheese with other things: humous, peanut butter, wholegrain mustard, homemade pesto, or nothing depending on the context.
I have to admit I've not even tried the fake-cheeses available, are they any good (nutritionally, taste-wise, etc)?

It was swimming up at Goat Island marine reserve up past Warkworth north of Auckland and having the friendly fish nibbling at our hands and coming up to our masks when we were snorkelling that put me off eating fish even Jen.
I'm just trying some of the non-dairy stuff for first time. Soya yogurt is nice. I think it was sweetened though. And I had some coconut yogurts too with fruit. They were nice. Could easily have those. G

Jenelopy fake cheeses aren't typically healthy but are nice if you don't expect them to be exactly like cheese made from animal milk and in looking for alternatives other than fake cheese I think you went the right way. You can get some very high end ones that are made with nuts that are likely to be healthy in moderation. Of the others, the soft cheeses tend to be the best ones, taste-wise.

Violife do one, launched fairly recently. The taste is similar but it doesn't have the squeaky rubbery texture. Apparently a better texture can be achieved with a strip of tofu but I'm not sure of the recipe.

Chris - yes, the Sainsbury's Free From range included cheddar style, cheddar with chives, haloumi and a few others. They were OK. Might be best cooked actually, like one can do with haloumi. Assuming that it melts/stretches etc. like cheese. Might not! G
