I tend to use red lentils and finely chopped mushrooms, with a bit of browning added, looks just like mince.

One of the nice thigns about not eatng meat is not having to eat revolting things like mince. (maybe my judgement was clouded by school dinners?)

I wouldn't try and replicate it in a veggie recipe, but use something nicer like lentils, beans or veg.

I could never stand mince - in fact it's probably one reason I'm veggie, it made my stomach turn whenever I smelt it at primary school.

Yeah - I make my chilli with red pepper, celery, carrot, courgette and black beans as the substantial part; rather than any kind of meaty substitute. Has a lovely texture and feeling of freshness to it.

RS, I tend to do the same thing in chili or bolognese too, though sometimes in the latter case, I might toss in quorn mince.

Once upon a time, Tesco used to do a lovely vegetarian mushroom "pate" - I suspect it could be recreated with mushrooms and cream cheese or creme fraiche.

Recently I made this vegan mushroom pate: veganonboard.com - it was really good and a very tasty alternative to goats cheese to go on toast with my lunchtime soup (as I'm trying to cut my dairy down a bit). I used pecans rather than walnuts and suspect that any nut would do really, or brown lentils if you avoid nuts. I'm going to try that next time.

I like the sounds of that SK. I'm going to have to try that...I have lots of walnuts at the moment. I make a vegan parmesan with them, garlic and nutritional yeast.
