OH makes a really good mushroom pate. And one with olives (and for the less strict veggies, one with mackerel). So much nicer than any we've found in the shops.

Not a shrooms fan but olive pate sounds better than the meaty variety. Is it essentially tapenade minus the anchovies or very different?

There used to be a sandwich bar in Bristol that had at least 2 vegetarian pates on every day. They were the most popular fillings. The aduki bean and lentil ones were amazing. For me, nothing has come close to their recipes.

Stilton and pear was a favourite of mine - the Patchwork Pate Company (I think) but it has breadcrumbs in so I can't have it now. :-( They do a nice red lentil with sundried tomato too.

I used to like cheese of most varieties, in quite large amounts...only my lungs hate it, so had to stop eating it.

Mushroom (and walnut) pate:

3 1/2 cups shitake, crimini and/or portabella mushrooms, cut in quarters
1 shallot, chopped
1 tablespoon fresh thyme, chopped
2 tablespoons cold-pressed extra-virgin olive oil
Sea or rock salt and freshly ground pepper to taste (optional)
2 teaspoons fresh lemon juice
2 tablespoons unsweetened coconut water
1/3-cup walnuts, chopped
Preheat oven to 190C - gas 5. In a large bowl, toss mushrooms with shallot, fresh thyme and olive oil. Season with (optional) salt and pepper. Transfer to a rimmed roasting pan (or baking sheet) and roast for 25 minutes. Remove from oven and cool to room temperature. Using a high-speed blender or food processor, transfer the mushrooms to the bowl of the blender and add remaining ingredients. Pulse until smooth or finely chopped (whichever you prefer). Adjust seasoning if needed. Serve at room temperature. Serves 6.

Vegan parmesan recipe:

1 cup walnuts
1 clove garlic, peeled (I use 2)
2 tbsp nutritional yeast
1/2 tsp sea salt

Dump everything in food processor bowl and process until it looks like fine crumbs. Store in fridge.
