I'll be attempting not just vegan (been there, done that, easy peasy) but also gluten free (ooooo, avant-garde, exciting) ones later today. I couldn't find plain gluten free flour, so I got some gluten free 'pancake mix' (buckwheat and tapioca flour mixed together, to which the baker is supposed to add eggs, milk, and sugar. So.... Just flour, really. Not pancake mix at all), which should hopefully do the trick. I shall report back.

Some of them crumbled, and I didn't go hard enough on the mixed spice, but they're a perfectly edible end product. I'll be off the booze, animal products, and chocolate, from Wednesday, so maybe I should knock out a half batch of 'normal' ones later as well. To use up the single egg that's left in the house if nothing else.
