Next time you want a cake recipe that works with oil, I did eatwell.co.nz on Monday. Used 110g oil instead of butter, and water instead of milk. Made a chocolate glace icing. |

I'm glad you liked it Linds. That looked lovely lf - would you mind sharing the recipe? What prompted the Viking cake Dave? That looks nice Jenelopy - does it need the icing? It's just I'm trying to avoid too much of the 'extras' that come with cake. I'm on a mission to not exit lock down heavier than I entered it. |

Mrs jiggs, you're right, sort of. I am nearly vegan, i eat eggs our own chickens have laid. I don't think the icing is essential. |

Thanks Jenelopy. DT - when I bake bread for my husband I use this very easy recipe: https://www.dovesfarm.co.uk/recipes/traditional-white-bread- You could sub the fresh yeast: For dry active yeast you generally need to use half the quantity of fresh yeast stated in the recipe and for instant yeast you need to use 1/4 of the quantity of fresh yeast. So if the recipe has 30g (1 ounce) fresh yeast then you can use 15g (1/2 ounce) active dry yeast or 7g (1/4 ounce) instant yeast instead. |

This is the recipe Sharkie suggested but with tweaks to fit with what we had in. Apple and pear cake. Looked a bit too rustic even for me so drizzled a bit of icing to tart it up. Verdict- delicious. I didn't quite have enough apple/pear and the full quantity would have been perfect. As it was it went down well for afternoon tea. |

Glad it worked and was good, leaguerer. I remember tweaking my version (as indeed Nigella tweaks the original Anna del Conte recipe). The basis is sound and useful and tweaking to taste and availability is half the fun of baking. Cooking in general tbh.
