Ok what is parkin? I remember that feeling well when I went to Uni and discovered that half the words in my vocabulary were not Scottish but Doric (or sometimes just weird words made up by my dad).

Parkin is the best cake ever Linds- hope you get her home and can keep her home. This is ridiculously tough on our teens. Marigold has her 15th birthday next week and had planned a walk with 4 friends. A walk. For a 15th birthday. And she won't be able to do that now. |

Less ginger, more treacle n oats. My gran, and then my mum, and then me, - no ginger My mil uses ginger. Hers is a good cake, but it's not parkin! |

The recipe I used had ginger. And mixed spice. But I feel it needed more black treacle as it’s not very dark. It’s a ginger/treacle cake with oatmeal, so it’s a rich soft chewy cake! Traditionally eaten around bonfire night. I don’t think I’d had bonfire toffee before I came to Yorkshire either. |

In the supermarket there was no oatmeal, no mixed spice, and limited treacle, raisins, mixed peel. I think everyone in Yorkshire is making parkin or Christmas cake this weekend!
