I browned the sausages then added the onion, mushrooms and chorizo then the stock, Guinness and everything else and thickened with cornflour before adding to the slow cooker for the rest of the day.

put a whole chicken in today no liquid with the idea of popping in the oven to crisp just before tea.
it's literally falling off the bone .. to lift it will result in it falling to pieces! plus I have a load of stock bubbling!
now pondering what to do next!

Chicken had collapsed but I was able to move it in 1 so finished off in oven with roast veg whilst cheese sauce on leeks browned.

Never “carved” a whole chicken with a serving spoon before!

We're going to have cashew pork tomorrow - bought a small shoulder of pork, which I think OH was planning on chopping up and marinating overnight, ready to stick in slow cooker tomorrow.

Cashew pork was good - pork was super soft, and fatty bits had melted away, and it was quite spicy. Only got 4 portions though (supposed to be 6), but think OH had to chop a fair bit of skin/fat off when he was chopping. Still have 2 portions for a tea during the week.

Loving all these updates and cooking! Lamb curry in our pot for Tuesday I’ll cook overnight then cook and portion up and freeze the extras.

Thai green chicken stir fry sorted for tomorrow.
