Let's face it, we're all time poor and quite often lacking in inspiration when it comes to meal ideas. We'd much rather be out running, right?

I whipped up a super simple, incredibly quick and surprisingly tasty pasta thingy from an old Jamie Oliver book this evening and it got me thinking that between the thousands of us on here, we must have some great, healthy and quick meal ideas worth sharing. Do how about we give it a whirl. Nothing longer than 15 (ish) minutes though.

Allow me to go first with tonight's dinner. Minimal ingredients and rediculously quick. The only thing I did differently was added 4 cloves of garlic.



I reckon this would taste even better with some prawns.

The other thing I was thinking is that this could be useful when we're away in the camper van for a quick and easy pre race dinner. So if like to think we could come up with some great carb loady type meals as well.

Useful for school nights too when all we want to do is get home and eat quickly.

I do hope people will play along as new meal ideas are always appreciated.

Great idea I like the idea of no fuss cooking.

Especially when just cooking for one you don't want to spend hours in the kitchen

Bought pesto mixed with natural yoghurt, cream or crรจme fraiche with something like tinned tuna and frozen peas, or anchovies and capers makes a great quick pasta sauce. Iโ€™m a big fan of something you can knock up while the pasta is cooking

I made something similar this week - threw beans and broccoli in with the pasta for the last few minutes. At the same time had fish cooking in a pan (plus lemon juice, garlic, sliced peppers, some chopped fresh tomatoes), stirred bought chilli pesto through the pasta, served with the fish and pan veges on top. Plus some grated cheese. Quick, tasty. All good.

Another pasta idea
Cook pasta

Cook (optional) spring/onions peppers etc and some protein like salmon

Drain pasta save a bit of liquid
Bung everything into pan with liquid and stir in tub of Philadelphia cheese

Done
Make more than needed and eat leftovers cold

Stir fries - all sorts of combinations possible and you can cheat with sachets of sauce!

Posh beans on toast - pancetta, butter beans, mustard & creme fraiche stirred in with some grated cheese, served on good bread toast.

My staple used to be boiled pasta, add broccoli and peas to the pan a few minutes before the pasta has finished cooking, stir through some green pesto and sprinkle cheese on top. Nowadays I might add some chopped cooked chicken or ham.
