Great start LG! It's duck breasts in lettuce wraps for tea tonight. Except OH will make himself some actual wraps |

Well done LG! I had my official end of the month weigh in. After messing about for a few months and playing with a couple of lb here & there I made a pact to make headway on losing 1-2lb this month..... over the moon I’ve managed to lose 2.5lb!!! I am going to attempt 2lb by end of April as that will give me a new stone bracket but I’ll also be happy to maintain this loss for a few weeks to let my body adjust to it. |

I had done very well but will be going to pot tonight as it is our weekend treat (hubby on call this weekend). Please to be back to my lowest though but being less mobile now won't help!

I couldn’t get ricotta cheese but have a soft cheese and mozzarella in the house so what would I be best to use for my cauli bake?

I'd use the soft cheese but perhaps with a bit of cheddar mixed in if you have it? I generally use Philadelphia garlic and herbs version, or plain, depending on the recipe. It has a long use-by date so it's part of my fridge 'store cupboard stand-bys' |

Thanks, that’s why I had one in the fridge but I also bought a mozzarella today. I don’t usually cook with so much cheese so hence I’m not sure . Cauli in the oven so will see how it turns out. I have found this week expensive but that a because I had to buy most of the store cupboards stuff as it’s all new to me. I’m sure next week’s shop won’t be as bad. |

I’m the same as LD with soft cheese. It’s quite versatile.

To be honest LG I think that is one criticism I'd make of the recipes in the BSD book in that it's a bit costly to get your cupboard stocked - I've never used chia seeds before, or quinoa (not that I've used much of that yet!!) I made a mistake with the duck. The recipe called for legs but I only had breasts in the freezer. I should have cooked them as I normally would, ie pan fry then finish off in the oven, but followed the recipe and slow-cooked them. They shrank a *lot* that way, and were a bit dry. Using iceberg lettuce as the wraps instead was fine, and OH was very pleased with the pancakes he made using this recipe: bbcgoodfood.com |

My issue is trying to cut recipes down to serve 2 instead of 4. The cauliflower bake was a hit. I used half cauli and half broccoli. Think I had too big a portion but it was really tasty. I will need to run and walk tomorrow Not bought the quinoa yet but did use the chia seed in my yogurt on Monday. |

Took the mince out the fridge for tea still in date but it was black normally I’d have just binned it but I took it back and they exchanged it. So tonight we had prawn and feta pasta instead. I did buy some garlic bread while I was there but him indoors had it ready when I got back so I was saved from myself 😂 |
