I have courgetti usually or just put it on cauliflower rice. I absolutely love spaghetti and could eat a bowlful with just grated cheese on it but courgetti works just as well with bolognaise. I pad the bolognaise out with any veg I have that needs using up these days, as long as it's not starchy veg. Or salad. Lettuce and cucumber don't go well in it

Having children who wouldn't eat their veg meant I automatically add carrots or whatever was to hand to bolognese sauce
We had chicken lime laksa for tea tonight, except without butternut squash and with aubergine instead. OH had rice with it but I found it enough without any added carb.

I'm mostly replacing bread/pasta/rice/potato with 50g baby spinach. It's going OK. Although I ate 2 sausages before checking the label today.

I’m having chicken lime laska on Friday. I don’t like aubergine so will have the butternut squash.
Tomorrow is salmon.
Wednesday is OH’s birthday so I will do the goulash but in the slow cooker.

I'm making chilli tomorrow. The goulash cooks really nicely in the slow cooker, as does the chicken and mushroom "pie" filling.

I often do a goulash in the slow cooker so know I will be fine.

Morning, I know it’s not what I should do but I weighed myself today -1lb but that could just be end of weekend eating anyway. I have to weigh myself again on the 26th cause that’s when I take my measurements as well.
Today’s meals are: Br: Greek yogurt with chia seeds and berries. Lu: No carb ploughman’s
Di: Salmon and veg.
Off for a walk with my friend so carrying plenty of water.
