I'd still like to try goose.... although I hear it's over-rated unless cooked just so.
We were thinking about a fresh turkey from the local Butcher this year, but there's been an outbreak of bird 'flu in a farm fairly locally. I think we'll settle for a frozen one from Lidl! (Never had a bad frozen turkey yet, even cheap ones are okay.)
There will be 6 for dinner on Christmas day, and four the next (or maybe 4 for sandwiches on a walk on the hills!).

We'll have a goose, we always have a goose - not difficult to cook, but usually need a bit longer than any recipe says and a good long rest.

Rosehip, what flavour does goose have? Can you compare it to duck, chicken or any other bird?

Good resting time is probably the one thing that the chefs do get right.

More duck than anything - but richer and stronger.
Shrinking the skin the night before by pouring over boiling water and then letting it dry (and it needs to be dry before going in the oven) is a trick I learnt from grandma - similar to what the Chinese do with Peking duck - I think
(Grandma and nana both raised geese for Christmas, so we only had turkey as an extra to bulk out the goose when there were 20+ of us for Christmas lunch)

No turkey for me this year! We're having a post 5 course reheat at home restaurant meal so I thought I'd be more adventurous - duck to start and lamb for the main course. The main advantage of getting something prepared is that OH is veggie and I didn't really want to have to cook 2 different things when there are only 2 of us anyway.

We think we have dodged the vegan bullet also. Think our resident vegan will only require breakfast.

We made an entire vegan Christmas dinner one year. Granny claimed afterwards that she hadn't liked to say anything at the time but it had given her bellyache that lasted till April.

My Granny used to say that herbs 'blew her up'.
