I finally started the parkin which I made back in November. It was a bit dry but tastes brilliant with lots of butter on it. Will try a different recipe next time.

It should be moist and fudgy. Perhaps too long or too airtight? I know I said it wd be OK.

I've added (I hope) the Parkin recipe I used to the article. I added more ginger and used oatbran instead of oatmeal and plain gf flour and it was a hit with everyone who tried it.

I made enough for 6...so 4 balls of dough in the freezer.
Pizza is not convenience food. Mind you we almost never eat take outs. We have to be desperate to do that.
