I do like making a plate pie. Mum used to make a lot; we had loads of apples from our garden. And she hated making pastry so never rubbed the fat into the flour completely, which accidentally made flakyish pastry rather than proper shortcrust. Her pies were in high demand at the WI harvest supper apparently.

That's interesting.. my mum used to insist on top and bottom pastry and used to go mad at pies, any pies without.......she only ever had a pub pie once...her face was like thunder when she found NO PASTRY at the bottom...it was like she'd been robbed!

I like a pastry top and bottom to my pie - but thin pastry. I will always ask if out if it comes with a bottom, and if not would never order (after a similar experience to your mum WS!)
