I made banana muffins yesterday, made them last week to use up bananas that were so far past eatable and they were a massive hit. Worked again yesterday!

Recipe I use:

Mix together 175g light muscovado sugar, 175ml sunflower oil and 3 large beaten eggs into a big mixing bowl. Lightly stir with a wooden spoon. Add 140g grated carrots, 130g raisins and grated zest of 1 large orange

Sift 175g self-raising flour, 1 tsp bicarbonate of soda, 1.5 tsp ground cinnamon and 0.5 tsp grated nutmeg, plus a good pinch of salt into the bowl. Mix everything together, the mixture will be soft and quite runny

Pour the mixture into the prepared tins and bake for 40-45 mins or until it feels firm and springy when you press it in the centre

* * I give 15 mins and move tins around in the oven

Any brown sugar seems to work fine

Topping :

Beat 50 g butter in a large bowl with a hand mixer until really soft. Add 200 g cream cheese (I use Philadelphia, which is in 180 g tubs now), and beat again until well mixed. Sift over 100 g icing sugar (golden is good if you have it), add the zest of an orange, then beat until smooth

This icing is much lighter and than most normal carrot cake toppings I’ve tried. The recipe makes enough to fill two cakes or fill plus top one
