It was probably seeing you there Linds :-)

As I said on the wrong thread I've never tasted the original (as I have to eat wheat free) so can't vouch for its authenticity/similarity but I have this recipe:

Recipe for Cumbrian Grasmere gingerbread.

Preheat oven to 180C.Line a 19 x 29cm tin with baking paper.

Sift 250g plain flour
1 1/2 level tsp ground giner
1/2 level tsp baking powder
stir in 125g light soft brown sugar
and 150g melted salted butter.

Mix well.

Tip into tray and press down lightly and bake for 30 mins.
Mark into squares but leave in the tin until cold.

We did a Long Distance Walkers Association event a few years ago that started / finished in Grasmere. A piece of gingerbread was part of the refreshments given to finishers. I’m going to try making some :-) Thanks LMH

You'll have to let me know how it compares to the real thing. I remember spending a long time looking for a recipe after a holiday in the Lakes many years ago - there weren't many to be found.

It will probably taste better if you use ginger instead of giner too!

There's definitely little chunks of candied ginger in there too so maybe add in a bit of that.

We have got a jar of Stem ginger in syrup (from Morrison’s). I’ll put some of that in when I make it ;-)
