Wriggling Snake
ok it is not baking per se but I knocked up a summer pudding just now, yesterday we noticed quite what looked like a few red and black currants left on the bushes in the local community orchard, so we picked them, ended up with almost 1kg, so add some strawberries, it is setting in the fridge now, will leave it a day, turn it out and take a pic for y'all..

Poppy - the alternative is to cut out the centres and fill with fruit/cream. It's the taste that counts though!
Just a quick gf loaf baked here this morning. First time using a new recipe and initial impression is good.

Back on the ice-cream making here as it’s warming up again...a batch split in two for flavouring as I couldn’t decide, so a small tub of lemon and ginger, and a small tub of vanilla & crunchy biscoff spread swirl and I’ve managed to make them without daughter noticing so if they’re gone before she gets any she won’t know any different 🤔🤣

Victoria sponge (Stef’s family recipe)
Weigh three or four eggs (eggs are typically around 60 gm so you’ll have either 180-ish or 240-ish - today’s three 184 gm)
Cream weight of eggs Stork or butter with light brown caster sugar. Add eggs, re-blend. Add teaspoon Vanilla essence. Add same weight SR flour, fold in, re-blend
Transfer batter to greased tins (I nearly always use butter). Cook near bottom of oven at c 180 deg C for 20 mins and check. Typically needs a further 5 to 10 mins
