Anyone got a decent recipe for eggless cake? Mine's in the oven now, but I'm not exactly hopeful it's going to turn out okay, looked very heavy and airless when it went in...

It just had to be eggless. The recipe I found made a cake that looked okay, but the whole thing was too dense. Youngest said it had more the texture of brioche than cake. May have skimped a bit on the sugar (because I always cut the sugar down on cake recipes, usually they're too sweet), but otherwise more or less followed the instructions.

Maybe I'll stick to cookies next time!

LR - If it’s like brioche call it brioche then it’s a win!!! It definitely looks very nice - or you could always serve it with some custard to a) add a bit more sweetness and b) hide/overcome the dense texture...
(I’m like you in that I always reduce sugar, only problem I normally find now is if I eat shop/other peoples homemade cakes I find them even sweeter than ever...)

Looks good to me Louise. If you need to do eggless in future you could sub flax eggs or banana or try one of the many vegan recipes online. Purps bakes egg free.
