Daughter baked cookies last night - scuppering my early night but it's always better if I supervise (if only because then I can make sure that things get put away). They looked pretty good and definitely soft rather than crisp.
Any favourite chewy cookie recipes? I'm not keen on them being too sweet (US recipes seem to have loads of sugar) but a chewy oaty raisin cookie is lovely.

I've not done any baking today - I'm running out of containers to store it in - but as I struggled to find any vanilla essence/extract in the supermarkets, I found a recipe and have made my own this morning. Put 5 vanilla pods cut open, in a little Kilner bottle. Pour vodka in to cover and shake. Leave for a few months (at least 2 but better if left longer), shaking every week. Top up with vodka when you use it. Replace the vanilla pods when they are past their best (every year or so)

- lol GM, daughter ut a vanilla pod in a jar of vodka about 18 months ago to make vanilla vodka for cocktails. We forgot about it after making a couple and I found it the other day - it's black, but a small drop smells very strongly of vanilla so I think it works as extract!
I just scrape a pod into whatever calls for vanilla and then put the pods in the container that the caster sugar lives in.

WS what recipe do you use for iced fingers?
I've just had a flashback to saturday mornings when I was little and mum would come back from the shops with either jam doughnuts or iced fingers, and we'd sit on the steps in the garden to eat them. It probably bought her all of 10 mins precious peace!
