m doing a bit of stocking up at the moment so made more peanut and chocolate brownies last night - my 3rd attempt at teh same recipe and the best outcome. The first time I didn't have the right sized tin so they spread an ended up more like biscuits; the n2nd time they tasted good but I'd used GF flour and they sank in the middle. This time they held their shape and have the right chewy/crusty combo.

When we got up this morning, I had a lovely surprise. I'd forgotten that I'd put he bread maker on timer overnight and at 9am we had warm, fresh baked bread with butter for breakfast.

I've still got to make meringues to use up spare egg whites, but needed caster sugar. Tesco didn't have any but I went to the Aldi next door and they did. I'm all stocked up on baking goods once again :)

Chocolate and peanut butter brownies sound lovely GM. Did you add xantham gum when you baked them with the gf flour? Mind you I wouldn't expect the gf flour to make them sink. Still no baking powder to be had but risotto rice is now available again (I can only shop online). If you can't get caster sugar you can whizz granulated to make it finer.

I added something - can't remember what it was now, LMH. It might have been xantham gum (I've got some). Maybe the mixture wasn't well enough cooked. It took an extra 15 minutes baking last night to get the right consistency.

Banana and nutella buttercream tray bake for this week. Rookie error with the frosting - make sure butter is soft and creamed before you put icing sugar anywhere near it and the mixer whisks.

Looks amazing.

Can't decide between choc peanut butter cookies and lemon drizzle for today/tomorrow. Lemon drizzle would be a crowd pleaser but it's not really the day for having the oven on for an hour.
