We have strong white bread flour, buckwheat flour, SR and Plain .... but no yeast and no rye or wholemeal flour to start a new starter for sourdough. Raffo is going to make soda bread... he's never done it before. I have - but ages ago.

I know.. quite bizarre. I nearly didn’t try it incase I wasted 400g of precious flour.
But I couldn’t find buttermilk... so I thought I should ‘ave a go.

You can make yeast out of dried fruit or potatoes if needed. Not too hard.

I’ve made a start on yeast just in case I can’t find any in the shops as I only have a few packets left. It’s really making a sourdough starter and seems pretty straightforward, you just need flour and water

Yeah but (some) rye or wholemeal flour works best.

Quarter cup of flour and same of water. Mix. Put somewhere warmish (my kitchen). Stir and add a tablespoon or two of flour and same of water twice a day, in 3-5 days it’ll be ready.
I don’t think it matters that much what flour you use? The website said wholemeal is better but I don’t have any.

We've only ever gone by the book and used some rye flour and strong white bread! But Raffo's sourdoughs are things of beauty (and taste!)

I just want something to make rolls with because that makes ds1 happy. Whether I can buy enough flour in a few weeks is another matter. My boys eat pasta (especially ds1) and bread (especially ds2) so I’m having to improvise right now. Just glad I have a bread maker!!
