Oh and I gently tamp my stovetop! I was shown how to use one by my late mother in law who made the best coffee! Also you turn the heat off as soon as you can hear the boiling, and a puff of steam comes out. You do not wat to boil the coffee. You want just enough heat to drive the eater through the coffee.

I have now watched the video and it’s almost what I do. At least eight minutes before plunging.

I heat the water to 95c. Haven’t tried skimming though.

How does one heat water to a given temperature? I just boil the kettle and leave it 5 mins or so. Don’t tell me it’s another gadget :-)

Indeed, there are such things as temperature controlled kettles Fields. That's one luxury buy that I've not gone down the route of (yet).

I think guessing the right temperature is part of the fun. My machine has been tinkered with until I had the right temperature for me. Everything else is technique of the Barista 😎

Is there something exotic about variable temperature kettles? I’ve been using one for a few years now, already on my second model.

Incidentally they are ubiquitous in Argentina. Essential for mate addicts.

I am asking myself how I've missed this thread.

I drink black coffee. I like it strong. I have done bean expirements and there is strong with taste V just nasty, a bit like dark chocolate really.

Me too. I've been on fetch for years and I still find gems every now and then.

I don't use ground coffee a lot, I prefer to grind the beans every morning so that I have a fresh cup of coffee to start the day. Ground coffee is for days when I'm in a hurry.

I also make espresso with freshly ground powder in a stove top Italian espresso maker; the same simple model my Italian grandmother used back in the day. Lovely!

Do you mind if I pedantically say it can't be espresso from a stovetop? It is a lovely way to make coffee though :-)
