I’ve got some soup on the go - leek, potato, broccoli, runner bean and baby spinach. Well into October now and prime soup season me thinks

We had soup last week, first time for ages. Leek & potato for me, Lentil (with carrots & onion in ham stock) for the kids.

Got some dried red lentils and a pack of mixed frozen veg I would like to use up. They’re sitting in my store cupboard / freezer and I don’t tend to use them. I obviously bought them in a virtuous moment but reality is they’re not things I tend to use when cooking.
So I think, why not make them into soup and that may be relatively tasty?

Soup on the go here
Never cooked with lentils before and didn’t realise how much they’d absorb and expand
I’m gonna need a bigger boat!

The last soup I made was carrot and butterbean. It was delightful. I have a little pumpkin sat on the side which I think I'll turn into soup next.
