Wriggling Snake
I was watching th eprogeam about Hormones on BBC4 last night.
That insulin initially came from Dogs' pancreas, and that a Capon is a cockerel without testicles, more tender meat apparantly, which explains why my mum was always pleased with her Capon for sunday lunch.

I didn't think capon was available in the uk any more; it's illegal to castrate them chemically / hormonally and fiddly (and therefore expensive) to do it surgically, so big producers don't bother.
Sometimes big hens are sold as capons, I think.
