Some nice easy stuff here also. madebyluci.co.uk The simple vegan shortbread is fantastic and stupidly easy to make. I put dark chop chips in it too and nobody believes it is vegan. |

Used tempeh with my Thai curry tonight and really enjoyed it. It does soak up more liquid though doesn't it.

Reigniting the tofu debate - I've bought some really good 'black forest*' smoked tofu in the past from a slightly hipster supermarket chain called Färm in Brussels. I never noted the brand name, but will try to stop in next week and get some more. *not that one. Apparently there's a Japanese one too. |

Yum Raemond, the sounds good. I've bought some marinaded tofu with peppers and garlic that's quite tasty. Taifun Tofu Rosso - goes nicely in a bolognese sauce.

Last night I did Jack Monroe's Tin Bolognese. I enjoyed it, as did Squeak, Silvershadow and Nightjar. Binks and Pip didn't like it. Anyway, I am now a bit bored of Jack Monroe recipes!! Next week, I'd like to make something using rice noodles... suggestions and recommendations welcomed! (Note: I have to avoid peanuts, mushrooms (if possible) and olives... and gluten. Everything else is fair game, I think.) |

We are now on our third batch of the shortbread (thanks for the link Joopsy!), although that's not quite as indulgent as it sounds as I made half quantities (12-16 biscuits depending on cutter, thickness etc). Using coconut oil instead of trex as I couldn't find any.

My go to choice would have been noodles with a peanutty stir fry, but NO, no peanuts!! How easy is frying your own tofu? I could do a sauce I make with soy sauce, tomato sauce and brown sugar, with some toasted cashews on top. |
